No Fail Banana Muffins
Merry Christmas and a Happy New Year to everybody! May you all be blessed
with happiness and good health for the coming year.
Made these muffins this Christmas morning. I call this the No Fail Banana Muffins as it is so easy to make and indeed yummy too. Thanks to Jenny Chan who kindly shares this recipe.
Recipe
2 cups plain flour )
1 1/2 tsp sodium bicarbonate ) sieve 3 times
pinch of salt )
4 ripe bananas (Montel size) ) mash and mix together. Set aside
1 cup brown sugar )
6 oz melted butter )
2 eggs ) mix and beat well
1 tsp vanilla essence )
Some walnuts.
Method
1) Mix all ingredients together well with a spatula. ( Add in chocolate chips/raisins if desired).
2) Spoon into muffin cups - 2/3 full. Sprinkle walnuts on top and bake for 20 to 25 mins
at 180 deg.C depending on the size of your muffin case. Test with a skewer.
Note: I added in 1/2 tsp of cinnamon powder.

Blueberry Muffins
I have always love the good old butter cake. Rather than spend the whole day watching telly, I made some muffins. This is actually the normal poundcake recipe and I added some blueberry jam that I found in the fridge. The texture is quite soft as I added in an extra egg and more milk. I reduce the sugar content of about 30gm. Will be taking some to the office tomorrow.

Easy Banana Muffin
Since I have 2 ripe bananas left, I decided to make some muffins for breakfast. Even though I have blogged a banana muffin recipe before, this one is quick and simple to do.
Banana Muffin
2 cups plain flour ) sieve together
4 tsp baking powder )
1 cup brown sugar (I use 3/4 cup)
2 or 3 ripe bananas - mash with fork
Some chocolate chips/raisins
2 eggs - whisked with a fork
1 tsp. vanilla
1 cup fresh milk or full cream milk
100 gm butter - melted
Some whole walnuts to put on top of muffins
Method
1) Put flour, sugar, bananas, chocolate chips/raisins into a bowl and give it a stir.
2) Mix the milk, vanilla and eggs together and pour onto ingredients (1) followed by the melted butter.
3) Fold the mixture lightly. Do not over mix (maybe about 12 or 13 folds). It is alright if you can still see
some flour.
4) Spoon into muffin tray and put a walnut on top. Bake at 190 deg C for about 20 -25 mins.
Check with a skewer and if it comes out clean, the muffins are ready.

Banana Walnut Muffins
Left with 6 ripes bananas, I decided to make some banana muffins. This time I used a recipe which I have never tested before though it is written down in my cookbook. I have no idea where I got this recipe from. It could be from one of those TV cooking shows. They turned out delicious and very easy to make. I added in some chocolate chips.

Banana Walnut Muffin (Makes 12 big muffins)
6 ripe bananas (mashed)
240 gm self-raising flour
1/2 tsp cinnamon powder
100 gm brown sugar
100 gm walnut
180 ml milk or 180ml orange juice
2 eggs (A)
120 melted butter
1/4 tsp salt
1) Add cinnamon powder, salt and sugar to flour
2) Add eggs, milk, melted butter and mix
3) Add in mashed bananas
4) Mix the above together but do not overmix.
5) Spoon into muffin pan. Add walnut on top and bake 20-25 mins and check with a skewer. If the
skewer comes out clean, then it is done.
